Veggie Fried “Rice” (Quinoa)

Sometimes all I want in the world is a big ole bowl of fried rice, but then I have to remind myself that I still have a good 10 pounds to lose after having my son!

I figured there had to be a way that I could get the same satisfaction without all the extra calories. That’s when I decided to whip up this quick, healthy dinner!

I decided to replace the rice with quinoa and just do veggies instead of adding meat. This was mainly just to save money and time. Win-win!

Quinoa really might be one of the best healthy superfoods that still tastes good!

I also used 2 bags of frozen vegetables to make it even easier.

What’s even better is, to my surprise, my toddler ate this up!

It really is just a tasty dish, simple as that. It saves great too!

Side Note: Look at these HUGE wild green onions that I found on our property!

It was too good of an opportunity to pass up so I used these instead of regular yellow onion, but I would usually use yellow onion in a recipe like this.

How To Make Veggie Fried “Rice” (Quinoa):

1.Rinse quinoa well using a strainer and cook according to package instructions.

2. Dice your onion and add to a hot skillet with the olive oil set to medium-high heat. Cook until onions are soft.

3. Move onions to the side of the skillet and add the eggs, frozen vegetables, and minced garlic. Give everything a good stir! Cook for about 5-7 minutes until eggs are cooked and vegetables are soft.

4. Add cooked quinoa, salt, pepper, soy sauce, and chopped green onions.

5. Give everything a good stir, let it cook for a few minutes to warm everything up, then voila! Time to serve.

Ingredients
  

  • 2 cups quinoa
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 4 eggs
  • 4 cloves minced garlic
  • 2 bags frozen vegetables of your choice! (I used frozen peas and an Asian medley)
  • ¼ cup green onions, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ cup soy sauce

Instructions
