Instant Pot Sausage, Green Beans, and Potatoes

If you’re looking for an easy, tasty dinner to put on the table super quick, then look no further! This is the one you want!

This brain child of mine came about one night when I had a hungry husband and toddler and absolutely no idea what I was going to feed them! Never a good thing.

I’m one of those people that always has canned green beans, canned potatoes, and cream of mushroom soup in the pantry, most likely because I’m a descendant of some clever Southern women.

You can almost always make something happen with those ingredients!

So when I saw those few things in the pantry that night, my confidence came back and I went into problem-solving mode.

I had recently bought a couple links of turkey kielbasa sausage from the store that I didn’t have plans for. When I remembered those, the light bulb went off!

I decided to grab my handy dandy instant pot, throw all of these ingredients in, cross my fingers and toes, and pray for a decent outcome!

The outcome: A stew-like concoction that created its own gravy and let me tell you, it was DELICIOUS. My husband literally couldn’t stop talking about it for days and requested I make it again that week. And the next week. And the week after that.

My favorite part of this dish though was how EASY it was to throw together. It took me all of about 4 minutes to cut up the sausage, brown it in the instant pot, throw the canned ingredients on top, and start the instant pot. Glorious! You gotta love a good meal that takes next to no time to prepare!

Alternate Tip: You can also cook this in a crock pot or on the stove, I just prefer the instant pot for time sake!

How To Make Instant Pot Sausage, Green Beans, and Potatoes:

  1. Slice sausage links into thin coins. About ¼-½ inch thick.

Side Note: These knives are the BEST. I’ve had them for over 5 years now and they’re still going strong. Much cheaper than other sets I’ve seen too!

2. Dice onion (if using).

3. Set instant pot to saute and add olive oil, sausage, salt, pepper, and onion (if using).

4. Stir every couple minutes and cook until sausage is slightly browned on all sides.

5. Turn saute function off and add green beans (drained), potatoes (drained), and cream of mushroom soup. Stir until just combined.

6. Set the instant pot to pressure cook for 7 minutes.

7. Do a quick release, stir, and serve!

Ingredients
  

  • 2 (13 oz) links kielbasa sausage (I use turkey, but you can use any kind of link sausage)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 (14.5 oz) cans green beans
  • 3 (15 oz) cans whole potatoes (You can also use canned diced or sliced potatoes)
  • 1 (10.5 oz) can cream of mushroom soup
  • Optional: 1 small onion (or half medium onion)
