Copycat BJ’s Parmesan Crusted Chicken

This chicken. THIS CHICKEN. BJ’s Parmesan Crusted Chicken is by far my favorite meal from any restaurant, hands down.

And I know I’m not the only one! Nearly every time I order it at BJ’s, the waiter will tell me, Good choice! That’s our most popular entrée.”

And of course, being the frugal, resourceful person that I am, I figured there had to be a way that I could recreate the infamous Parmesan Crusted Chicken at home for a quarter of the cost!

If you’ve ever ordered this meal, you know it’s definitely not cheap. It’ll cost you upwards of $18.

To make it at home will cost you far less than that and brings with it a sense of pride that you made it yourself! I always think a meal tastes better when you know you put in the work to make it happen.

I also love that when I make it I can put extra sauce on top just because I can!

Trust me. This sauce is so dang good that you’re going to want to put it on EVERYTHING.

Pair it with some parmesan crusted chicken, sun dried tomatoes, steamed broccoli, and creamy mashed potatoes and you have yourself one heck of a bounty!

So rest easy that you can save your hard-earned money, swoon over some delicious chardonnay butter you just made yourself, and easily impress your family/guests with this winner of a dish!

How To Make Copycat BJ’s Parmesan Crusted Chicken:

1.Cut the fat off of the chicken breasts and slice them in half thickness-wise.

These are the knives that I have been using for over 5 years now. I love them and they are such a good deal!

2. In between sheets of saran wrap, use a meat cleaver to pound each chicken breast to an even thickness.

3. Put flour in a large bowl or plate. Whisk together eggs and water in a large bowl. Mix together panko bread crumbs, parmesan, salt, pepper, and garlic powder in a large bowl or plate. Put the three bowls/plates side by side.

4. Heat the oil in a skillet on medium-high heat to about 350-400 F or until you start to hear little bubbles.

5. Dip each chicken breast in the flour, egg mixture, then the bread crumb mixture, ensuring the entire piece of chicken is coated then put it in the skillet to fry. You’ll most likely need to fry 2-3 chicken breasts at a time.

6. Fry the chicken for about 4-6 minutes on each side until deep golden and crispy.

7. Once both sides are fried, transfer the chicken to a paper towel-lined plate to soak up the extra oil.

How To Make Chardonnay Butter:

1.Melt butter in a sauce pan.

2. Add the wine and cook on medium for about 2-3 minutes.

3. Add salt, sugar, lemon juice, white pepper, and nutmeg. Stir.

4. Turn off the burner and add the heavy cream. Stir.

How To Serve:

Take a crispy chicken breast, top with lots of Chardonnay butter, parmesan cheese, and sun dried tomatoes, and serve alongside some steamed broccoli and creamy mashed potatoes.

Ingredients
  

  • 3 chicken breasts Sliced in half thickness-wise
  • 1 cup flour
  • 1 ½ cups freshly grated parmesan cheese Or the sprinkle kind from a can if that's all you have!
  • 2 cups panko bread crumbs
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 3 eggs
  • ¼ cup water
  • 2 cups frying oil I use vegetable oil

Chardonnay Butter

  • 6 tbsp salted butter
  • cup white wine (Chardonnay)
  • ¼ tsp salt
  • 1 tsp sugar
  • 3 tbsp lemon juice
  • 1 cup heavy cream
  • tsp white pepper
  • tsp nutmeg

Garnishes

  • ¼-½ cup sun dried tomatoes Preferably the kind in a jar with olive oil
  • ¼ cup shredded fresh parmesan cheese

Instructions

Notes

This Chardonnay butter sauce is one of the most amazing sauces I’ve ever come across. Feel free to top anything with it or add it to any meal to take it over the top!
